The most direct revenue item there is, because every payment method you cannot accept is a sale that walks away. One reader is not enough: batteries die and mobile signal at markets is famously bad. Carry a charged backup, know your reader's offline behaviour before you need it, and keep a float of cash.

A sign that is readable from across the aisle

What you sell, in big letters, above the level of people's heads. Most stalls put their name on the banner and not what they actually sell, so shoppers have to stop and work it out - and at a busy market, they simply do not.

Prices on everything, clearly

Unpriced goods lose sales, because a large proportion of people will not ask. Clear prices also cut the number of interruptions while you are serving, which lets one person run a busier stall.

A weighted canopy and proper weights

Not glamorous, and the difference between trading and packing up. An unweighted canopy is a hazard, and most markets will not let you pitch without weights. Rain and sun both end an unsheltered day early.

A way to capture people who are not buying today

Most people who stop will not buy at that moment. A clipboard for emails, a sign-up on a tablet, or a code on the counter that opens your shop or list is what turns a busy day with modest takings into future sales. Keep it to one field and one clear reason to sign up.

Height on the table, not a flat spread

Crates, risers, a stepped display - anything that lifts stock towards eye level. A flat table reads as empty from two metres away even when it is full, and shoppers scanning an aisle at head height simply do not register it.

Samples or a demonstration, where the goods allow

Anything that gives a person a reason to stop moving. Tasting, trying, handling, watching something being made. It is the oldest tactic at any market because it still works better than signage.

Something to put in the bag

A card with your shop address, next market dates and a discount for ordering online. It costs pennies per sale and it is the only thing on this list that goes home with the customer and keeps working afterwards.

A comfortable pair of shoes and a flask

Included seriously. Ten hours standing on concrete degrades how you greet the two hundredth person of the day, and the last two hours of a market are often the busiest. Vendors who fade lose the end of the day.
